pancake surprise

I am always on the lookout for a good pancake recipe.  And not your mother's old-school recipe (although classic is often best, in my opinion), but a new and interesting take on it.

And today I found it - ricotta cheese pancakes.  Sounds interesting, right?  And, surprisingly, they were really good!  I took a basic ricotta recipe that I found online and tweaked it a bit to make it my own.  The Fella and I both agreed: light, fluffy and full of flavour.

Eliza Jane's Ricotta Cheese Pancakes

1 egg
1 cup self-raising flour
1 tsp vanilla
1 tsp cinnamon
1 cup milk
1 cup ricotta cheese

Whisk ricotta, egg, vanilla, cinnamon and milk in a large bowl until smooth. Whisk in the flour.  Pour into a non-stick pan and voila!

I have become a fan of putting dollops of plain yoghurt on my pancakes, as well as maple syrup and fresh fruit like blueberries and strawberries.

Next time, I want to try this with chocolate chips involved.

  1. Sounds deepish! BUT. Have you tried putting butterscotch chips in pancakes. it is life changing.
